Sheep and goats contributes nearly one-fourth to the total meat production in the country. They are considered as future food animals under climate change scenario. Majority of sheep and goat flocks in the tropical countries are raised on natural grazing resources. These resources are gradually denuding both in yield and quality and compromising the meat production. Further feed scarcity from grazing landsi s transforming aged old traditional system to semi intensive and intensive one. The demand of small ruminant meat is increasing rapidly both in domestic and international markets and on the other hand relatively poor production from available animals, feed and infrastructure is reflecting in inflating meat prices. To bridge the gap between demand and supply, large scale specialized sheep and goat production system, which are more conducive to adopt improved production technologies like prolificacy, higher feed efficiency and accelerated production are some of the pertinent and quantifiable approaches. Furthermore, strategies should also be focused on small scale market oriented intensive production system based on existing system and agro-ecologies in certain pockets wherein innovative breeding strategies, choice of breed, feed and feeding system, housing, health and management may also be considered. The demand for healthy meat and meat products is growing among health conscious people, which is creating favorable condition for organic and lean meat produced in hygienic premises. It will further increase with the rising incidences of cardiovascular diseases, obesity, hypertension etc.The designer meat products can be promoted as healthy food by fiber, pre- and robotic fortification, sodium and fat reduction, nutraceutical enrichment etc. To improve shelf life of meat products, modified atmosphere packaging, vacuum packaging, edible packaging, active and smart packaging are being used in recent years.In addition to meat processing, efficient utilization of slaughterhouse by-products are equally important to minimize environmental pollution and profitable meat trade. Adulteration of meat, drug and pesticide residues, microbial contamination etc. is some of the important issues in meat sector. To assess the wholesomeness of the meat and meat products stringent quality control measures and enforcement of prevailing Acts and Regulations is necessary. There is an urgent need to develop marketing intelligence and transformation in the marketing system of sheep and goatas well as meat. This book gives a comprehensive account of current status of sheep and goat meat production and processing being practiced and knowledge and technologies for improving designer and hygienic meat and meat product. The book is expected to assist students, researchers, academician, policy makers and planners. This will have long-term benefits and will promote development in both meat sector and R&D institutions.

A.K. Shinde currently working as Principal Scientist (LPM) and In-charge, Livestock Products Technology at ICAR- Central Sheep and Wool Research Institute, Avikanagar, Rajasthan. He did his M.V.Sc and A.H. and Ph.D. from Jawahar Lal Nehru Krishi Vishwavidhyalaya, Jabalpur in 1983 and 1996. He joined ARS services in 1989 and had more than 25 years of experience in sheep and goat production and product utilization. He has been awarded Dr Rajendra Prasad Puruskar of ICAR and Rajiv Gandhi Rashtriya Gyan Vigyan Pustak Lekhan Puraskar of Ministry of Home Affair for Technical Books. He has published 76 research papers in national and international Journals, presented 107 invited papers and abstracts in conferences, seminars, workshops, etc. He has written seven text and reference books on sheep and goats on various aspects and also honored to write a book on Diseases of Goat and Sheep published by ICAR. He is a member of several research and management bodies of the institute and member of the advisory committee of a Ph.D. students of IVRI and NDRI. He is Editor of the Indian Journal of Small Ruminants since last 8 years and members of several professional and scientific societies.

Y.P. Gadekar completed the B.V.Sc. & A.H. degree from the Maharashtra Animal and Fishery Sciences University, Nagpur, in 2004, and the M.V.Sc. and Ph.D. degrees in Livestock Products Technology from the Indian Veterinary Research Institute Izatanagar, Uttar Pradesh, India, in 2006 and 2012, respectively. In 2008, he joined as Assistant Professor, at Bombay Veterinary College, Parel, Mumbai and subsequently in 2010 joined Agricultural Research Service (ARS) at ICAR- Central Sheep and Wool Research Institute, Avikanagar, Rajasthan. He is recipient of ICAR JRF and IVRI Institute fellowship. Dr. Gadekar has more than 80 publications to his credit comprising of research papers, review articles, research abstract, lead papers, pamphlets etc. His current research interests include designer meat products, carcass evaluation and value addition to meat and sheep milk. S.M.K. Naqvi, Director, ICAR- Central Sheep and Wool Research Institute, Avikanagar is a distinguished Animal Scientist well known for this contribution in Animal Physiology more specifically in areas of sheep and goat reproduction, adaptation physiology and biotechnology. He completed his M.Sc and Ph.D. from National Dairy Research Institute, Karnal in 1982 and 1988. He was awarded Biotechnology National Associateship (Overseas): Advanced training in the area of embryo biotechnology at Ruakura Ag. Research Hamilton, New Zealand and nominated for training on: Leadership for the 21st Century: Chaos, Conflict and Courage by ICAR. He has more than 30 years of experience in sheep and goat with specialization in reproduction techniques, semen freezing, embryo transfer etc. He has more than 120 research papers published in national and international seminars and 135 invited papers and abstracts presented in seminars, conferences, workshops etc. He is National Fellow of National Academy of Agricultural Sciences, Indian society for Sheep and Goat Production and Utilization, National Academy of Sciences, India and Society of Animal Physiologists of India. He has guided several PhD students. He is a member of several important academic bodies such as board of studies, Academic Council, Research Advisory Committee of SAU/SVU and ICAR institutions. He was awarded ICAR team award twice 1997-98 and 2003-04. He is also a recipient of Dr D.N Mullick Memorial Award (206-07) given by the society of Animal Physiologist of India. A. Sahoo,Principal Scientist & Head, ICAR-CSWRI, Avikanagar is a distinguished scientist in the field of Animal Nutritionwho completed his M.V. Sc and Ph.D. degree from Deemed University, IVRI, Izatnagar and had undergone 6 mo Post-Doctoral research experience at University of South Australia being bestowed with Endeavour Research Fellow by DEWAR, Govt of Australia. He has rich research experience of >27 years in the field of ruminant nutrition, feed resources, Feeding systems & evaluation, clinical and stress nutrition, livestock production and economics. He is having a sound publication record of nearly 500 comprising of >110 research papersof National and International repute. He has authored two books, edited 19 books/compendium/manuals and contributed 14 book chapters. He is a life member of 9 Professional bodies and is also member of Editorial Board of two reputed Animal Nutrition Journals. Presently, he is working on "Small Ruminant Productivity and its Enhancement through Feeding and Nutritional Manipulations' for the socio-economic benefit of rural and marginal livestock farmers.
