This book is intended to provide the reader with a comprehensive knowledge about the concept of nutritional security, the need of achieving nutritional security, various nutritional elements present in fruits and vegetables and how they are useful in maintaining proper health as well as their role in warding off various diseases. While going through this book, the learners will get an insight towards the requirements and the recommended intake values of various nutritional components for different age, sex and physiological groups. Nutritional disorders arising due to malnutrition are common among the Indian masses. Consequences of nutritional insecurity, most importantly, the status of malnutrition prevalent in various age groups has become an important aspect. This book deals with the physiological requirements of various nutrients for human beings, the required and the recommended values of intake of both micro and macro nutrients as well as various disorders arising due to malnutrition. This book specially focuses on the intake of dietary fibre, its sources and role in prevention against various chronic diseases. Antioxidants, phytochemicals present in various fruits and vegetables play an important role in scavenging of the deleterious reactive oxygen species. Their antagonistic approach towards various chronic diseases has been elaborated in the book. Post harvest processing of fruits and vegetables is done with the aim of achieving ease in transportation and consumption, for their long term storage, for enhancing their flavor as well making them available throughout the year. Most commonly used such treatments are also discussed in this book. This book covers various anti nutritional compounds/ factors present in the commonly consumed fruits and vegetables and their harmful effects on human health.

Dr. Gyanendra Kumar Rai is working as an Asstt. Prof. (Biochemistry) at School of Biotechnology, Sher-e-Kashmir University of Agricultural Sciences and Technology of Jammu. He is an Agriculture Graduate and Post Graduate in Biochemistry from University of Allahabad, Allahabad and D. Phil. from University of Allahabad. Dr. Rai has 12 years research and 8 years teaching experience and his work on basically plant biochemistry and molecular biology. Dr. Rai has delivered the expert lectures in various winter/summer schools and workshops/symposia. He has attended many training/ workshops/ International/National symposium/conferences, and also awarded as best paper/poster presentation in various conferences. Dr. Rai awarded as young scientist associate award, Vimla Devi medal for Biochemistry and Fellow Award from Society of Applied Biotechnology. Dr. Rai completed and conducted many research projects as a PI or Co PI. Dr. Rai has thirty two research papers published in international and national reputed journals, ten book chapter published in reference book, training mannual and compendium and forty three popular articles are published in various science magazines. He has good knowledge about analytical instruments and handled various types of sophisticated equipments like LCMS, GCMS, AAS, IEF and molecular biology equipments, etc.

Dr. R.R. Kumar has completed his UG from UAS, Bangalore and PhD from Division of Biochemistry, IARI, New Delhi. His research area is 'stress-genomics'. Dr. Ranjan has published more than 30 research paper, 4 Book chapters and 2 books. He has also guided the M.Sc. and Ph.D. Students till date 4 MSc and one Ph.D. student are working in his supervision. Dr. Ranjan was coordinated 4 CAFT trainings in Biochemistry. He is also involved in International projects and as a PI handle research projects from different scheme and funded by various agencies viz., DST, DBT, National fund etc. Dr. Ranjan has been awarded with young scientist associate award, young Scientist award, Fellow Award from Society of Applied Biotechnology and Received "Chancellor Medal" of Narendra Dev University of Agricultural and Technology (NDUAT), Faizabad.

Dr. Sreshti Bagati, M.Sc. from Banglore University, Banglore and Ph.D. in Biotechnology from School of Biotechnology, Sher-e-Kashmir University of Agricultural Sciences and Technology of Jammu. She is working on molecular breeding for quality traits. She has a good knowledge about malnutrition disorders and phytochemicals role in disease therapy.
