These organized dairies have been successfully engaged in the routine commercial production of pasteurized bottle milk and various dairy products. The author has had the privilege of sharing his knowledge of dairy equipment.
This Practical book “Dairy Process Engineering” included study about various equipment used in dairy industries such as evaporators dries butter, ice-cream and cheese making machine etc. Now we have understood different operation involved in processing in milk. We will learn practically the operation of equipment. On the basis of this study we will be able to operate the plant and produce number of dairy products constantly. It is according to ICAR fifth dean committee syllabus for B. Tech. ( Dairy Technology) students and also fruitful for B.E. ( Agriculture) students. This practical book includes step by step all process done in dairy industry. This will provide a wealth of valuable information on dairy technology and its applications. It is essential reference for dairy technologist who needs to understand dairy equipment working in dairy industries.
Although other practical manuals have been published is not available on easy terms makes it rather difficult for Indian dairy technologist student to procure them. This book has been written in clear and concise language, the text-matter supplemented with tables, illustrative problems and their solutions and photographs of some of the equipment used in the dairy industry. I am sure it will not only serve a text book on Dairy technology for Indian students but also as a reference book for our dairy supervisors.
