Although other practical manual have been published is not available on easy terms makes it rather difficult for Indian dairy technologies students to procure them. This book has been written in clear and concise language the text-matter supplemented with tables, illustrative problems and photographer of some of the equipment used in the dairy industry. I am sure it will not only serve as a text book on dairy technology for Indian students but also as a reference book for our dairy supervisors.
Dr. (Mrs.) Seema Tanwar, has obtained her B.Tech. (Food Technology) degree from C.D.F.S.T. in 2009, after that M. Tech. and Ph. D. (Processing and Food Engineering) from C.T.A.E., M.P.U.A.T., Udaipiur in 2014 & 2018 respectively. She has been working College of Dairy and Food Technology as Technical Assistant, Senior Research Fellow and now as Guest Lecturer since 2009. She has 40 research and review publications in various international/national journals and seminars and 3 books in the field of dairy and food engineering. Her fields of interest are food engineering, agricultural processing and dairy engineering.
Dr. Vishvambhar Dayal Mudgal, presently working as Dean, College of Dairy and Food Science Technology, Maharana Pratap University of Agriculture and Technology, Udaipur, Rajasthan. He has vast experience of over 30 years in the field of research. He has graduated in Agricultural Engineering from Sukhadia University, did M. Tech. from IIT, Kharagpur and Ph.D. from NDRI, Karnal. He also worked as Head, Processing and Food Engineering, PI, AICRP on PHET, MPUAT, Udaipur. He has also developed many fields worthy post-harvest technologies and equipment. He has organized many national seminar, summer school, model training course and workshop on post-harvest technology and value addition of food materials for augmenting rural prosperity through establishment of agro-processing activities in the production catchments. He is a Fellow member of ISAE and Institution of Engineers (India). He has published 25 Books/Proceedings/Book chapters and more than 40 papers in peer-reviewed national and international reputed research Journals/Conferences. He has been conferred Lifetime Achievement Award by Blue Planet Society, Prayagraj, UP.
Dr. S.K. Jain, is presently working as Professor, Department of Processing and Food Engineering, College of Technology and Engineering, Udaipur. He completed his B.E. (Ag.) degree from M.L. Sukhadia University, Udaipur in 1986; M. Tech. (Post-Harvest Engineering) from Indian Institute of Technology, Kahargpur in 1988 and Ph.D. from Maharana Pratap University of Agriculture and Technology, Udaipur in 2007. He has more than 29 years of experience in teaching, and guided more than 20 PG students for their dissertation. Dr. Jain published more than 70 International and National research article including books, training and lab manuals and research papers.
